Ahi Tuna- Rare or Well Done- That is the Question

This particular culinary memory is very vivid to me. The first time I had fresh tuna, my now husband had just taken me out on our first date. I was very excited about our date; we sat down and scanned the menu.(side note: that summer was when I started my restaurant job, so my food knowledge was slim to none). MAKES ABOUT BLINIS 30INGREDIENTS2 eggs½ cup sour cream¼ cup flour½ tsp. kosher salt⅛ tsp. baking soda1 tbsp. canola oil¼ lb. boneless smoked trout, flaked into ½" chunksCrème fraîche, cayenne pepper and fresh dill sprigs, for garnishINSTRUCTIONS1.
